A Flapjack a Day Keeps the Doctor Away

One of the hardest (yet most important) tasks I constantly try to accomplish is taking the time to eat a healthy, substantial breakfast. My busy schedule requires me to fix meals that are quick and easy –  two descriptions that typically don’t describe meals that are also healthy. So I set out on a mission to find some quick recipes that are both nutritious and delicious. Studies suggest that eating a healthy breakfast may help combat obesity and diabetes in addition to increasing cognitive function and energy levels. 

After plenty of research and playing around in my kitchen, I’ve managed to reach my goal! Below is a recipe for quick and easy pancakes (yes, I said pancakes!) that contain all the essential nutrients you’ll need to kickstart the day. Whether I’m in the mood to enjoy a nice and languorous brunch or I’m halfway out of the door with only 5 minutes to spare, they’ve become a staple for me on weekends and weekdays alike!  

The Easiest {and Most Delicious} 4 Ingredient Pancakes

Prep Time: 2 Minutes

INGREDIENTS:

  • 1 Egg
  • 1 Ripe Banana
  • Blueberries (or any fruit topping!)
  • 1 tsp coconut oil (really any oil will do!)

DIRECTIONS:

  1. Mix together 1 egg and 1 ripe banana in a bowl. Don’t mix too much; you want to keep some texture to it so it makes flipping easier!  
  2. Using a flat pan, coat the bottom with oil.  
  3. On medium heat, add mixture to pan in small round pancake shapes. Once you start seeing the pancakes bubble on top, flip the pancakes.
  4. And voilà!  The easiest and quite possibly the healthiest pancakes you will ever have!
